Even if you do love wreaking havoc on your immune system, you’ll still want to make this recipe. They’re vegan and gluten free and have protein, fiber, and healthy fats from the chickpeas and almond butter. They are the perfect bite size for an on the go or pre workout snack.

This recipe is also an easy way to meal prep some snacks for during the week. It’s as simple as blending everything up in a food processor and rolling the dough into balls. Got kids? Get them involved in the kitchen by having them help you form the balls. Then you can all say “Got Milk” while you enjoy your cookie dough.

You can simplify it even more by skipping the rolling step and just whipping out a spoon to eat it straight out of the container. Meal prep is all about saving time! You’re obviously just being more efficient.


Make these Dark Chocolate Almond Cookie Dough Bites so you can enjoy your cookie dough and skip the trip to the ER.

Recipe:

Makes about 16 balls

Ingredients:

455 g - Cooked Chickpeas - Drained and Rinsed

60 g - Oat Flour*

14 g - Almond Flour

128 g - Almond Butter

50 g - Honey - Sub maple syrup for vegan

45 g - Dark Chocolate Chunks

½ tsp - Salt

½ tsp - Vanilla Extract

¼ tsp - Almond Extract


Instructions:

Add all ingredients except chocolate chunks to a food processor. Blend until smooth.


Pulse in chocolate chunks. Alternatively, pour cookie dough mixture into a bowl, add chocolate chunks, and stir until well incorporated.


Using wet hands, roll the mixture into 16 balls.


Allow balls to chill in the fridge for at least 20 minutes before serving.


Store in the fridge for up to a week.


*Notes:

- If gluten free, make sure you use gluten free oats
