Chocolate-Covered, Peanut Butter Stuffed Dates

There are very few things that are better than chocolate, except for chocolate combined with another glorious food: peanut butter. For 7 year old me the epitome of chocolate-peanut-butter-goodness was always peanut butter cups.


Now that I’m an adult (only physically, I still have the mental capacity of a 3 year old who just discovered pixie sticks) I remade my favorite childhood treat a bit of an adult makeover too.

These peanut butter stuffed dates make a great pre workout snack, after dinner treat, or even a sweet party appetizer.


Now if you’ll excuse me, I’m off to enjoy a few of these dates. Followed by a peanut butter cup for dessert, of course!





 

Chocolate Covered Peanut Butter Stuffed Dates:


Ingredients:

12 g - Peanut Butter Powder - I used Naked Nutrition

32 g - Peanut Butter

3 tbsp - Water

200 g - Medjool Dates

45 g - Chocolate Chips

7 g - Coconut Oil


Instructions:

In a bowl, mix peanut butter powder, peanut butter, and water until a paste forms.


Split dates on one side. Remove pit.


Stuff dates with peanut butter. Place dates on a parchment lined sheet pan. Allow to chill in the fridge for 30 minutes.


Melt chocolate chips and coconut oil together either in a double boiler or in the microwave.


Remove dates from the fridge. Dip them into the melted chocolate or drizzle chocolate on top. Place the dates back on the sheet pan and place in the freezer until hardened.
