Makes about 3 servings
200 g - Frozen Cauliflower Rice
1 Large (about 150 g ) - Navel Orange
240 ml - Orange Juice
15 g - Cacao Powder
90 g - Rolled Oats*
28 g - Honey
2 - Clementines - Peeled and segmented - Sub orange
15 g - Dark Chocolate Chips
¼ tsp - Kosher Salt
1 tsp - Vanilla Extract
Add the cauliflower rice to a microwave safe bowl. Microwave for 2-3 minutes or until just cooked through*. Set aside and allow to cool.
Zest the orange. Using a knife, peel the orange, removing all the white pith*.
Add the cauliflower rice, orange zest, orange segments, orange juice, cacao powder, rolled oats*, honey, salt, and vanilla extract to a blender. Blend until completely smooth.
Pour the mixture evenly into jars. Allow to chill in the fridge for at least 2 hours.
When ready to serve, top with clementine segments and chocolate chips.
Store in the fridge for 3-4 days.
Make sure your oats are gluten free if needed.
Be careful not to overcook the cauliflower, or you will be able to taste it.
Remove all the white part of the orange or it will be bitter.
If you want the oats, to have more texture, do not blend the oats. Pour the blender mixture over the oats and stir instead.
