Chocolate Orange Overnight Oats (Vegan, GF)

Best part of Christmas? Breaking into a chocolate orange. Literally breaking. If you’ve ever had a chocolate orange, you would know that most of the fun is smacking it against a table to break the orange shaped segments apart. If you’re a fan of that chocolate orange flavor but not as into breaking things as I am, make these vegan Chocolate Orange Overnight Oats!

Perfect for meal prepping during the holidays, these jars will have you feeling joyful and triumphant all week long. You’ll feel especially joyful after seeing how easy they are to make. Just a few minutes of prep time will make sure you have a fiber rich, filling breakfast everyday. Meaning you can spend more time sleeping in your santa themed PJs. Plus, you get to eat chocolate for breakfast! A Christmas miracle!

Recipe:

Makes about 3 servings

Ingredients:

200 g - Frozen Cauliflower Rice

1 Large (about 150 g ) - Navel Orange

240 ml - Orange Juice

15 g - Cacao Powder

90 g - Rolled Oats*

28 g - Honey

2 - Clementines - Peeled and segmented - Sub orange

15 g - Dark Chocolate Chips

¼ tsp - Kosher Salt

1 tsp - Vanilla Extract


Instructions:

Add the cauliflower rice to a microwave safe bowl. Microwave for 2-3 minutes or until just cooked through*. Set aside and allow to cool.


Zest the orange. Using a knife, peel the orange, removing all the white pith*.


Add the cauliflower rice, orange zest, orange segments, orange juice, cacao powder, rolled oats*, honey, salt, and vanilla extract to a blender. Blend until completely smooth.


Pour the mixture evenly into jars. Allow to chill in the fridge for at least 2 hours.


When ready to serve, top with clementine segments and chocolate chips.


Store in the fridge for 3-4 days.



*Notes:

  • Make sure your oats are gluten free if needed.

  • Be careful not to overcook the cauliflower, or you will be able to taste it.

  • Remove all the white part of the orange or it will be bitter.

  • If you want the oats, to have more texture, do not blend the oats. Pour the blender mixture over the oats and stir instead.
